Couscous is an amazing option that counts towards the “grain” portion of your plate. You can find couscous in both whole wheat or refined forms, rice or pasta aisle.

Couscous can be paired with a variety of things, and today we’re going to mix it with peas and onions When you combine these items with sage, it makes for an incredible savory side dish.



1 cup onion (finely chopped)

½ teaspoon sage (ground)

1 teaspoon olive oil

1 1/3 cups water

1 cup green peas (frozen)

1 cup couscous

½ teaspoon salt (optional)


Combine oil and onions in a heavy skillet.

Sauté for 5-10 minutes until onions are lightly browned.

Add the peas, sage, water, couscous, and salt if desired.

Cover and cook on low for about 5 minutes or until peas are tender but still bright green and all the water is absorbed.

Fluff with a fork.

If desired, serve with lemon wedges or balsamic vinegar.
