The Potsdam Food Co-op’s Cheese of the Month for September will be offered during their second Thursday Sampling on Sept. 12.

From 3:30 to 5:30 p.m.you will have the opportunity to sample Urgélia, a Spanish cheese said to have the appeal of Monterey Jack with the appearance of Havarti.

Urgélia (pronounced ur-HEYL-ya) is a semi-cured pressed cheese made with the pasteurized milk

of Frisona cows. It is produced in a remote area of the Catalan Pyrenees near Barcelona, Spain.

It is the only cheese in Catalonia granted the Designation of Origin, a government sanction regulating production methods.

The one large cooperative that makes this cheese supports 200 small farms.

Urgélia has a brine-washed rind and a cream colored paste with small irregularly shaped eyes. The texture is soft and creamy with an acidic taste that is slightly nutty and a bit salty. It melts well and is delicious paired with burgundy or fruity wines, or beer.

Suggestions:

Urgélia is an excellent choice for a cheese board. It also complements crackers, olives, and bread. Serve it fresh in salads or as a snack with fruit, peppers, nuts, or cured meats. Add it to your favorite cheese sauce recipe for an interesting Spanish flavor. Melt it on a sandwich or burger, or try it on vegetables or creamy polenta.

The Potsdam Food Co-op & Carriage House Bakery is located at 24 Elm St. and open daily from 8 a.m. to 7 p.m. It is a member-owned cooperative grocery store (although membership is not required) where everyone is welcome to shop and anyone is welcome to join.
